You can learn a lot about a whisky just by looking at it. The depth of color is largely determined by the cask the whisky has been conditioned in, the thickness of the legs and the length of time they persist will give clues as to the strength of the spirit and the level of cask interaction.
The purpose of the first tasting is to appraise the texture while subsequent tastings are to analyse flavours and scents.
Unlike sight, which is a physical sense, smell is a chemical sense. The human olfactory system is capable of analyzing more than a thousand billion different volatile stimuli.Experts often say that tasting the whisky should only confirm what you’ve got from your nose. The two nostrils thus inhale at different rates and one or other of them will therefore have a higher propensity to convey aromatic molecules depending on the ability of the latter to bind to the olfactory epithelium.
What gives whisky its flavours are the sapid molecules of which it is composed. Each type of taste receptor can be stimulated by a wide range of chemical substances but is particularly sensitive to a certain category: sweet, salty, sour, bitter and Savoury, astringent, spicy, fatty, mineral (calcium) and metallic.
The finish corresponds to the stimulation of the sensory receptors by the aromatic molecules that are released from the mouth to the back of the throat, reaching the olfactory mucosa. Retro-olfaction thus accentuates the taste of the whisky.
What sensations are you getting? Is it mellow or punchy? Is it dry or smooth and fruity, Dry oak, vanilla and salt are all quite common finishes, Also the length of time you can taste these flavours for.
